• Italian Tuna Salad

    Ingredients

    • 1 pint cherry/grape tomatoes halved
    • ½ jar of pitted green olives Castelvetrano or Green halved
    • ½ jar kalamata olives
    • 1/3 cup of diced red onion or to taste
    • ½ jar of your favorite Monteleone Peppers w/ oil
    • 1 can Italian tuna or albacore tuna in oil
    • 1 container pearl mozzarella balls
    • 1 head Iceberg and or Romaine lettuce roughly shredded
    • ½ lemon
    • Salt and pepper to taste
    • 1 small loaf of Ciabatta bread

    Preparation

    Mix the first 5 ingredients together in a bowl (Can be made in advance and refrigerated). Cut/Shred the lettuce and squeeze ½ a lemon over it. Arrange the lettuce on a platter. Take the salad mixture and add the mozzarella balls. Scoop salad mix on top of the lettuce to serve and add salt and pepper to taste. Slice the ciabatta bread and heat some Monteleone Pepper oil in a pan. Add the bread slices and grill the bread to serve on the side.
